If there is a product that makes Santa María de Guía famous and is a symbol of the municipality, that is the cheese and. There are some varieties that are made here, the most precious is the one known as Queso de Flor, whose production process and special characteristics, as well as its flavour, make it being considered the gastronomic jewel of the Canary Islands. But this is just one of the varieties that make up the Protected Designation of Origin Flor de Guía Cheese, Cheese of Media Flor de Guía and Guía Cheese; which includes artisan cheeses made in the median areas of the northwest of the island, and whose principal characteristics are the artisan production process, traditional grazing methods, transhumance and the use of vegetable rennet.
